Juicy Grilled Ribeye with Herb Butter

Ingredients
- 2 ribeye steaks, 1-inch thick
- 2 tbsp olive oil
- 1 tsp coarse sea salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
Herb Butter
- 4 tbsp unsalted butter, softened
- 2 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Pinch of salt
Instructions
- Tenderize Use the Götze 48-Blade Needle Tenderizer across the entire surface of each steak. This breaks down the fibers and opens the meat for deeper flavor absorption.
- Season Rub steaks with olive oil, salt, pepper, garlic powder, and paprika. Let rest at room temperature for 30 minutes.
- Make the herb butter Mix softened butter with garlic, rosemary, thyme, and salt. Roll into a log using plastic wrap and refrigerate.
- Grill Heat grill to high. Cook steaks 4-5 minutes per side for medium-rare. Don't move them, let the crust form.
- Rest & finish Remove from heat, top immediately with a slice of herb butter. Rest 5 minutes before cutting.
