Juicy Grilled Ribeye with Herb Butter

The secret? Tenderize first.

Ingredients

  • 2 ribeye steaks, 1-inch thick
  • 2 tbsp olive oil
  • 1 tsp coarse sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

Herb Butter

  • 4 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Pinch of salt

Instructions

  1. Tenderize Use the Götze 48-Blade Needle Tenderizer across the entire surface of each steak. This breaks down the fibers and opens the meat for deeper flavor absorption.
  2. Season Rub steaks with olive oil, salt, pepper, garlic powder, and paprika. Let rest at room temperature for 30 minutes.
  3. Make the herb butter Mix softened butter with garlic, rosemary, thyme, and salt. Roll into a log using plastic wrap and refrigerate.
  4. Grill Heat grill to high. Cook steaks 4-5 minutes per side for medium-rare. Don't move them, let the crust form.
  5. Rest & finish Remove from heat, top immediately with a slice of herb butter. Rest 5 minutes before cutting.
